I love this idea! I'd take a guess that some pupils find this less threatening than writing, too, as they might be embarrassed about their handwriting but extremely confident on an iPad!
This would also be great for assessing students across time. Give the same prompt every 8-10 weeks?
You certainly could. Google Forms easily organizes writing/information to spreadsheets. That alone is earth shattering.
